The smell of Grandmas house, the big garden and her cooking brings a warm and inviting smile to your face. The afternoons sitting on the porch or in the kitchen shelling purple hull peas to freeze or cook is one of those. Certain smells can always trigger that warm inviting feeling. One of those is the sweet smell of sweet southern purple hull peas simmering on the stove. Whether picked fresh from the garden, a farmers market, or the local grocery store there is a way to recreate that wonderful smell.
Recipe:
Purple Hull Peas 2 cups
Beef Broth enough to cover the peas in the pot
Onion 1 medium and diced
Garlic 1 clove minced
Brown Sugar 2 tablespoons
Richards sausage 1 link cut small
First start by rinsing your peas. Set them aside while you saute your sausage, onions, garlic, and brown sugar. Once sauted add the purple hull peas and enough beef broth to cover the peas back to the pot. Bring to a boil and them turn down to a simmer. Check frequently and stir carefully to not smash the peas.
I like to use bamboo spoons to stir because they are not as harsh on the peas. Here is the link to the spoons I used. If needed add water to the pot to keep the peas just covered. Purple hull peas can be much more than a side dish. They are super easy to grow in your back yard. The bush takes up very little space in the backyard.
It is fun for the whole family. It is a great exercise in helping kids understand field to plate. Many young people have a disconnect with how their food makes it to the table.
